Sujihiki (Slicer)

A sujibiki knife is a kind of western knife, characterized by a narrow blade that is long and straight, and double-edged. This knife is suitable for cutting large chunks of meat, but because of its shape, it can also be used as a slicer or sashimi knife, so it is used in the kitchens of various restaurants. The blade is made of rust-resistant and durable materials such as stainless steel and molybdenum steel.
